Bikini Recipe

Yields 10 people

For the Clementine Cordial (yields 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

For the Premix (produces 850ml, enough for 10)

400ml decent vodka
100ml classic gin
150ml peach liqueur
200ml citrus syrup (see above)
Whole cranberries, to garnish
Mandarin essential oil, to finish

Method

To prepare the Syrup: Place the listed items inside a pan, heat until it reaches a simmer, agitating until the sugar dissolves. Next, turn off the heat and let it to cool down fully. Decant into a clean bottle, seal keeping it in the refrigerator, it can be stored for about four weeks.

To make Batch Mix: Mix all the spirits and syrup in a big jug, allow it to infuse for one hour, then filter it , ideally through muslin, so it's fully clarified.

When ready to serve: Measure 85ml of your cocktail base into a cocktail shaker packed with ice, gently stirring lightly for about 60 seconds to chill. Pour into a frosted cocktail glass or similar, top with the cranberries and complete it with a quick spritz of mandarin oil over the top.
